Making Bread Onboard: The Ultimate Bread Recipe

After experimenting with a number of recipes, we have finally found the Holy Grail:

It takes only a minute to mix, works with different types of flour, makes a nice light loaf, and even seems to be pretty resilient to getting it wrong.

The original source, complete with photos, is here: One-Minute Ciabatta Bread

But in case that site ever goes down, here is the summary:

Ingredients:

4 cups flour (any type will do)
2 cups water (doesn’t need to be warm)
1 tsp salt
½ tsp yeast (any type of bread yeast)

Method:

Mix all the ingredients together using a wooden spoon. It will produce a thick batter, pretty similar to a cake or brownie mix: i.e. it is much too sticky to attempt to knead by hand.

Grease a bread tin, and coat the oil with some dry flour.

Pour the bread into the tin.

Cover, and set aside to rise for 8 -12 hours – ie mix in the morning and bake at night, or vice versa.

When it has risen to double its original size, put it in the oven at 400 deg F for about half an hour. It should be a golden brown and sound hollow when tapped.

Take it out of the tin and sit on a wire rack until it has cooled down enough to eat.

Enhancements:

It works well with multi-grain cereal flours, and you can add seeds (flax, sesame, oats, sunflower) onto the top while it is rising. Alternatively, if you use white flour, why not add olives, cheese, and/or sundried tomatoes either into the mix or on top?

That’s it. It doesn’t get any easier, and tastes wonderful.
